Mexican Sweet Potato Burger Recipe

 

Starting this Sunday it is National Vegetarian Week 2015, so with that in mind we have a delicious Mexican Sweet Potato Burger Recipe for you.

Vegetarian food is vibrant, exciting and flavourful, whether it’s the plentiful choices at the supermarket or special menu items at a restaurant. On top of satisfying your taste buds, going vegetarian and eating meat-free food benefits animals, the environment and your health and wellbeing.

This isn’t however just targeted at vegetarians out there. It’s really tasty regardless of your eating habits and choices.

Sweet potato is probably the best carb ever. It’s good for you and it tastes amazing, not only that, but it goes with basically everything! This recipe lets sweet potato take centre stage. It’s really simple with only a few ingredients and it tastes awesome.

 

Ingredients - For the burger

2 large sweet potatoes
* 1 medium potato
* 1 400g tin mixed beans (drained)
* 1 400g tin lentils (drained)
* 1 large red onion (chopped)
* 1 chilli (deseeded and chopped)
* 2 cloves garlic
* 1/4 cup olive oil
* 2 tbsp paprika
* 8 tbsp flour
* Handful of coriander
* Seasoning to taste

Instructions

1. Start boiling a pan of water.
2. Peel your potatoes and dice. Boil in the water.
3. Lightly fry the onion, chilli and garlic and put to the side. Add your amount of chilli to taste (see notes below).
4. When your potato is starting to go soft, take it off the boil. Make sure it doesn't become too soft, of your burgers won't hold their shape.
5. When the potato is done, mash with the oil.
6. Add in all of the other ingredients and stir together until it starts to hold its form. You may need to leave the mixture to cool for a little while.
7. You may need to add a little more flour. Add the flour gradually to check the consistency.
8. Mould mixture in to burger shapes.
9. Fry your burgers in a small amount of olive oil. Brown the burgers on both sides.
10. Serve!

To serve with:
Bread rolls
Salad leaves
Sweet potato fries
Guacamole

Notes:
Cut the end off of your chilli first, to test how spicy it is. Add the amount of chilli depending on the spice of your chilli.
