PB, Honey & Banana Popsicle

So, school’s out and Britain’s entered a heat wave, what better time to get your apron on and make some delicious ice cold treats for all the family.

These very American popsicles utilise a flavour combination made in heaven – peanut butter, honey, banana and chocolate. What more can we say?


• 1 cup cashews
• 1 can full fat coconut milk
• ½ cup natural peanut butter
• 2 bananas
• 2 tbsp honey
• ¼ tsp salt
• 2 cups dark chocolate chips
• 2 tbsp coconut oil
• ½ cup salted peanuts, roughly chopped (optional)


1. To a blender add cashews, coconut milk, peanut butter, bananas, honey and salt. Blend on high until well combined
2. Place in popsicle moulds and allow to freeze for at least 4 hours (preferably over night)
3. In a medium sized mixing bowl over a hob, gently melt chocolate and coconut oil
4. Remove frozen popsicles from mould, and quickly dip in melted chocolate, sprinkling with peanuts (if using) immediately.
5. Place popsicles on a baking sheet and place back in the freezer for at least 30 minutes to allow chocolate to set.
